Naughty banana and orange stuffed pancakes

With Pancake Day just around the corner, Club Care Insurance have joined forces with One Man and His Campervan presenter and celebrity cook Martin Dorey to provide a great pancake recipe for those of you out and about in your caravans, motorhomes and campervans who don’t want to miss out on all the fun!

Martin says, “This recipe reminds me of baking bananas in the fire at camp. It has that gooey, fruity stickiness but without being overly sweet. The orange zest might even help to make it feel like it’s good for you – almost – but not really. Enjoy.”

Ingredients

For the pancakes

For the filling

  • 100g plain flour
  • 1 x free range eggs
  • 300 ml milk
  • A pinch of salt
  • Zest of a grated orange
  • 50g butter plus extra for frying
  • The juice of an orange
  • 2 x bananas, sliced
  • A pinch of grated cinnamon
  • 4 x level tbsp demerara sugar
  • creme fraiche

 

Method

Sieve the flour into a large bowl. Add the eggs, milk, salt and the grated orange zest. Mix ‘em all up with a whisk until smooth. Now get your frying pan hot and melt a knob of butter in it. Then spoon out a good three or four tablespoon’s worth of the pancake mixture into the pan and move the pan around to spread out the mixture. You can cook all the pancakes ready for the filling or get the filling going at the same time if you have space on your campervan or caravan hob and don’t mind a bit of multi tasking!

Now for the filling. Melt the butter in a small saucepan over a low heat, add the sugar and grated cinnamon and allow the sugar to dissolve. Then squeeze the juice of the orange into the pan and mix until you get a light golden syrup. Then add the chopped banana and simmer gently for a few minutes until the banana starts to get all gooey and lovely.

Spoon a little of the mixture on each pancake, along with dollop of crème fraiche. Roll up and devour. You might need a fork.

He drove 800 miles to find the UK’s most remote fish and chip shop on the Isle of Lewis, taking a week to do so and stopping only en route to ride the UK’s oldest rollercoaster, learn to dive in a dry suit, walk along a few proms, see some of the UK’s finest coastal art and cook a few recipes at some very fine camp sites along the way – including the Club Site at Luss, Loch Lomond and a Certificated Site on Skye. Martin also became a qualified dinghy sailor in Poole Harbour, camped at one of the UK’s very best coastal camping spots and learnt how to make crisps – and a very fine rum based cocktail – out of seaweed. He discovered how they put the letters in seaside rock in Great Yarmouth, saw the saucy seaside postcards that were banned at the Donald McGill Museum on the Isle of Wight and tombstoned in a flooded quarry in Pembrokeshire. As if that wasn’t enough for one summer he drove to the most northwesterly corner of Europe to surf, cook and photograph his campervan falafels and take a seaweed bath – via two of the world’s most scenic coastal drives and the only lighthouse in the UK that’s registered as a wedding venue.

He visited campervan festivals, ate ice creams, cooked and photographed all kinds of seasonal food on his little two ringed stove, skinny dipped and snorkelled. And all in the name of research. Tough job but ...
